Waldorf Leftover Turkey Salad

INGREDIANTS:
2 Granny Smith apples or other tart apples
6 ounce skinless turkey breast cooked and diced
1/2 cup walnuts, lightly chopped, plus 4 walnut halves
4 large Romaine lettuce or bib lettuce leaves
dash nutmeg
2 red apples
1/4 cup lemon juice or sherry vinegar
1/4 cup fat-free mayonnaise or low-fat mayonnaise
1/4 cup fat-free sour cream or low-fat sour cream
1 tsp sugar
1 chopped cup celery
2 scallion cut into 1/2-inch pieces
1/4 cup raisins or green grapes cut in half


DIRECTIONS:

  1. Wash apples with soap and rinse well. Core apples leaving the peels, then chop or dice and toss with the vinegar or lemon juice.
  2. In a large bowl, add the mayonnaise, sour cream, sugar and mix well.
  3. Add the celery, scallions, raisins or grapes, turkey and chopped walnuts (only chopped - not the halves) and toss again, carefully, to coat.
  4. Serve on lettuce leaves, top with a half walnut and a sprinkle of nutmeg.
